Potato/ Leak Filled Turnovers-Bolani



Here is a very traditional Afghan meal called Bolani: leak and potato filled turnovers.  Keep reading for the detailed recipe which I have divided in 4 parts for clarity…

Part 1: Dough Preparation

 In a big bowl you add the following:

  • flour
  • yeast mix (yeast + sugar in warm water)
  • salt

Mix and knead dough. Cover it and leave it aside for 45 minutes to an hour. Once ready, Divide the dough into equal pieces. Shape each piece into ball shape:


Part 2: Potato Filling and Leak Filling Preparation

In another big bowl…mash boiled potatoes and add to it the following:

  • Fried onions
  • Fried garlic
  • chopped coriander
  • chopped green onions
  • coriander powder
  • salt
  • black pepper

Mix  well


Leak Filling Preparation

All you need for this part is to add a pinch of salt in some chopped leak:


Part 3: Filling

Everything is ready …Let’s the filling begin!

Take a piece of dough at a time and roll it into a ball shape…After spreading some flour onto a surface, use a rolling pin make the dough as thin as you can, Fill it half with potato or leak filling and seal it over with the other half. Continue flattening it as much as you can with your hands or a rolling pin.

Part 4: Frying 

Add lots of oil on a pan with large surface…Try to smooth and flatten them more as you add to the pan one by one and fry them until its golden brown.

Serve with Yogurt Dip

Add a pinch of dry mint on yogurt  and serve it.
