How to Serve Afghan Manto
Once everything is ready, it’s time to bring it all together and serve.
Use a large flat serving dish and layer the ingredients as follows:
- Start with a layer of garlic yogurt sauce
- Add a layer of steamed dumplings
- Spoon another layer of garlic yogurt sauce on top
- Sprinkle with dried mint
- Drizzle the carrot sauce generously
- Finish with a handful of freshly chopped coriander

11/2 kg Grounded veil meat or any other grounded meat
3 onions, minced
Spices
2 tbsp. coriander powder
1tbsp. black pepper
1 tbsp. salt
1 cup Flour
1 cup water
Wonton wraps (sold in Asian Stores)
- Steaming
½ cup oil
- Carrot Sauce
1/2 cup oil
3 onions, diced
1 cup tomato sauce
4 carrots, chopped
1 cup Split chickpeas
2 cups water
Spices
1 tbsp. salt
1 tbsp. Coriander powder
1 tbsp. black pepper
- Garlic Yoghurt sauce
½ kg yoghurt or Afghani Yoghurt (Qoorot)
2 Garlic cloves, minced
½ cup water
Serving
Garlic Yoghurt sauce
Steamed dumplings
1 tsp Dry mint
Carrot Sauce
Fresh Coriander
Directions
- Filling
- Heat a pan and add the beef to roast it without adding anything else.
- Cook until there is no water left and the meat is fully roasted and dry.
- Mince onions using an electric food chopper.
- In a bowl, add the roasted beef, minced onions, coriander powder, black pepper, and salt.
- Mix well.
- Use water to moisten the edges of the wonton wraps.
- Place about 1 tablespoon of the beef mixture in the center of each wonton wrap.
- Join two opposite ends of the wrapper together.
- Press the edges well and seal the remaining four corners together (as shown in the video).
- Dip each dumpling lightly in flour.
- Place the dumplings on a flat surface or dish.
- Repeat for all dumplings.
- Steaming
- Dip each dumpling one by one in oil and place it on the steamer racks
- OR
- Brush oil on the bottom of the steamer racks, place the dumplings on the racks, and lightly grease the tops of the dumplings.
- Add water to the steamer base and bring it to a boil.
- Place the racks filled with dumplings into the steamer.
- Cover with a lid.
- Steam for 30 minutes.
- Carrot Sauce
- Heat oil in a pan over high heat.
- Add diced onions and fry until golden brown.
- Add tomato sauce and cook until all the water has evaporated.
- Add carrots.
- Add chickpeas.
- Add all the spices: salt, coriander powder, and black pepper.
- Add water.
- Cook for at least 20 to 30 minutes.
- Garlic Yogurt Sauce
- In a small bowl, add a little water to yogurt or quroot.
- Add minced garlic cloves.
- Mix well.
- Serving
- Spread the yogurt sauce on a large serving plate.
- Add the steamed dumplings.
- Add more yogurt sauce on top.
- Sprinkle with dried mint.
- Drizzle the carrot sauce.
- Finish with freshly chopped coriander.
