
Afghans love their bread and Quroot; combine the two, and you get everyone’s favorite recipe: Qurooti. Back home, Qurooti is known as a poor man’s dish because bread is inexpensive. Traditionally, all you would add to the bread is Quroot and onions. However, we prepare it a bit differently at home with a few additional ingredients.

The main ingredient in Qurooti is Quroot, which is made from sour yogurt. It is shaped into small, salted balls and left to dry. To use it in recipes, Quroot is first soaked in warm water and then ground into a smooth paste by rubbing it in a clay bowl. This process takes time and patience. Fortunately, ready-made Quroot paste is available at most Afghan grocery stores. Simply look for “Whey” or “Kashk” in your local store.

Ingredients
1 cup oil
2 potatoes chopped
3 tomatoes chopped
2 Onions chopped
1 tbsp. salt + 7 garlic cloves
2 cups water

Directions
- In a frying pan, fry the potatoes, tomatoes, and onions separately. Place them on separate plates and set aside.
- Add salt and garlic to a garlic masher and crush them into a paste.
- In a small bowl, combine the garlic paste with Quroot. Add a little water and mix until smooth.
- Pour this mixture into a saucepan and cook over medium heat.
- Add more water and bring it close to a boil. Do not let it boil over.
- In a large bowl, tear the bread into large, bite-sized pieces.
- Pour the hot Quroot over the bread, using as much as you prefer.
- Layer the fried potatoes, tomatoes, and onions on top.
- Garnish with dry mint and add walnuts to make it even more delicious.
